Raw Jackfruit Sabzi

- a.Prepare the Jackfruit
- b.Generously grease your hands and knife with 1 tsp of oil to prevent the jackfruit's sticky sap from adhering.
- c.Carefully peel the green, spiky outer skin of the jackfruit. Cut it in half, remove the hard central core, and then chop the flesh into 1-inch cubes.
- d.Immediately place the cut jackfruit pieces into a bowl of water to prevent them from browning.

- a.Pressure Cook the Jackfruit
- b.Drain the jackfruit pieces. Transfer them to a pressure cooker.
- c.Add 1/2 cup of water, 1/4 tsp of the turmeric powder, and 1/2 tsp of the salt.
- d.Secure the lid and pressure cook on medium heat for 2 whistles. Turn off the heat and allow the pressure to release naturally.
- e.Once safe to open, drain any excess water and set the cooked jackfruit aside. It should be tender but still hold its shape.

- a.Prepare the Masala Base
- b.Heat 2 tbsp of oil in a wide pan or kadai over medium heat.
- c.Add the mustard seeds and let them splutter. Follow with cumin seeds and asafoetida, and sauté for about 30 seconds until fragrant.
- d.Add the finely chopped onion and sauté for 6-7 minutes until it turns soft and golden brown.
- e.Stir in the ginger-garlic paste and cook for another minute until the raw aroma disappears.

- a.Cook the Sabzi
- b.Pour in the tomato puree and cook for 5-6 minutes, stirring occasionally, until the mixture thickens and you see oil separating at the edges.
- c.Reduce the heat and add the remaining 1/4 tsp turmeric powder, red chili powder, and goda masala. Sauté for one minute.
- d.Add the cooked jackfruit pieces, the remaining 3/4 tsp salt, and the optional jaggery. Gently mix to coat the jackfruit evenly with the masala without breaking the pieces.

- b.Sprinkle 2-3 tablespoons of water if the mixture seems too dry. Cover the pan and let the sabzi simmer on low heat for 5-7 minutes. This allows the jackfruit to absorb all the flavors.
- c.Turn off the heat. Stir in the freshly grated coconut.
- d.Garnish with chopped coriander leaves and serve hot.
