Step 2
- a.Soak and Pan-Fry the Bread
- b.Heat a non-stick skillet or tawa over medium-low heat. Add about 1 tsp of ghee and swirl to coat the pan.
- c.Take one slice of bread and gently dip it into the egg batter. Allow it to soak for about 10-15 seconds on each side. Ensure it's fully coated but not oversaturated to the point of falling apart.
- d.Carefully lift the soaked bread slice, letting any excess batter drip off, and place it onto the hot pan.
- e.Cook for 2-3 minutes on the first side, until it's a deep golden brown and the edges are slightly crisp.
- f.Flip the slice carefully and cook for another 2-3 minutes on the other side until it's also golden brown and the center feels cooked through and slightly puffed.
- g.Remove from the pan and place on a serving plate. Repeat the process for the remaining 7 slices, adding more ghee to the pan for each new slice to prevent sticking and ensure even browning.

What to keep in mind.
6 tips from the recipe — small details that make a real difference to the final dish.
- 1Use slightly stale or day-old bread. It's drier and absorbs the custard batter perfectly without becoming soggy.
- 2Thicker slices of bread (like Texas toast or brioche) work wonderfully as they can hold more batter and result in a creamier center.
- 3Maintain a medium-low heat. If the pan is too hot, the outside will burn before the egg custard in the center has a chance to cook.
- 4Ensure the sugar is fully dissolved in the batter to avoid a grainy texture on the finished toast.
- 5For an extra touch of flavor, add a pinch of cinnamon or nutmeg powder to the egg mixture.
- 6To keep the cooked slices warm while you finish the batch, place them on a wire rack on a baking sheet in a preheated oven at 200°F (95°C).
