Step 1
- a.Boil and Prepare the Eggs
- b.Place the eggs in a saucepan and cover with cold water by at least one inch. Bring to a rolling boil over high heat.
- c.Once boiling, turn off the heat, cover the pan, and let the eggs stand for 10-12 minutes.
- d.Immediately transfer the eggs to a bowl of ice water to stop the cooking process. Let them cool for 5 minutes.
- e.Peel the eggs, slice them in half lengthwise, and make a few shallow slits on the white part to help them absorb the gravy. Set aside.

Step 2
- a.Sauté Aromatics and Build the Masala Base
- b.Heat oil in a wide, heavy-bottomed pan or kadai over medium heat. Add the cumin seeds and let them sizzle for about 30 seconds until fragrant.
- c.Add the finely chopped onions and sauté for 8-10 minutes, stirring occasionally, until they turn a deep golden brown. This step is crucial for the authentic 'Seyal' flavor.
- d.Add the ginger-garlic paste and slit green chilies. Sauté for another minute until the raw smell disappears.

Step 3
- a.Cook Tomatoes and Spices
- b.Add the finely chopped tomatoes to the pan. Cook for 6-8 minutes, stirring and mashing with the back of your spoon, until they break down completely and become soft and pulpy.
- c.Reduce the heat to low. Add the turmeric powder, red chili powder, coriander powder, and salt. Stir well and cook for 1-2 minutes until the spices are aromatic and oil begins to separate from the masala.

Step 4
- a.Create the Gravy and Simmer
- b.Pour in 1 cup of hot water, stirring continuously to combine everything into a cohesive gravy. Bring the mixture to a gentle simmer.
- c.Cook for 3-4 minutes, allowing the gravy to thicken to your desired consistency.
- 5
Step 5
- a.Add Eggs and Finish the Dish
- b.Gently place the halved hard-boiled eggs into the simmering gravy, with the yolk side facing up to prevent it from crumbling.
- c.Spoon some of the hot gravy over the eggs to coat them well.
- d.Sprinkle the garam masala over the top. Cover the pan and let it simmer on low heat for 2-3 minutes, allowing the eggs to absorb the flavors.
- e.Turn off the heat, garnish with freshly chopped coriander leaves, and serve hot.
What to keep in mind.
5 tips from the recipe — small details that make a real difference to the final dish.
- 1For the most authentic flavor, ensure the onions are sautéed until deep golden brown, not just translucent.
- 2Making small slits in the egg whites before adding them to the gravy helps them absorb more flavor.
- 3Using hot water to make the gravy helps maintain the cooking temperature and improves the texture and color of the curry.
- 4For a richer gravy, you can add 2 tablespoons of beaten curd (yogurt) after the spices have cooked. Make sure to cook on low heat to prevent curdling.
- 5Mash some of the tomatoes and onions against the side of the pan to create a thicker, more rustic gravy.
Adapt it for your goals.
Add Potatoes
Create 'Seyal Aloo Anda' by adding 2 medium-sized boiled and cubed potatoes to the gravy along with the eggs. Lightly pan-fry the potato cubes before adding for extra texture.
Creamier GravyCreamier Gravy
For a richer, milder curry, stir in 2 tablespoons of fresh cream or cashew paste at the very end, just before garnishing. Do not boil after adding cream.
Spicier VersionSpicier Version
Increase the number of green chilies or add 1/4 teaspoon of black pepper powder along with the garam masala for an extra kick of heat.
