What to keep in mind.
6 tips from the recipe — small details that make a real difference to the final dish.
- 1Use a sturdy white sandwich bread as it holds the filling well and toasts perfectly.
- 2Don't over-boil the potatoes; they should be just fork-tender. Over-boiled potatoes can make the filling pasty.
- 3For a true Mumbai street-style experience, be generous with the butter on the outside of the bread to get a rich, crispy crust.
- 4Press the sandwich firmly with a spatula while toasting to ensure it's compact and the filling doesn't fall out.
- 5You can prepare the potato filling in advance and refrigerate it for up to 2 days, making assembly quick and easy.
- 6Toasting on low to medium heat is key to ensuring the sandwich heats through and the bread becomes perfectly crisp without burning.
