Konkani Egg Bhurji

- a.Whisk the Eggs
- b.In a medium bowl, crack the 8 eggs.
- c.Add 1/4 teaspoon of the salt and whisk vigorously until the yolks and whites are fully combined and slightly frothy. Set aside.

- b.Heat 2 tablespoons of coconut oil in a wide, non-stick pan or kadai over medium heat.
- c.Once the oil is hot, add 1 teaspoon of mustard seeds. Wait for them to splutter, which should take about 30 seconds.
- d.Carefully add the 10 curry leaves and let them sizzle for a few seconds until fragrant.

- a.Sauté the Aromatics
- b.Add the 2 chopped onions to the pan and sauté for 3-4 minutes until they become soft and translucent.
- c.Add 1 tablespoon of ginger-garlic paste and the 2 slit green chilies. Sauté for another minute until the raw aroma disappears.

- a.Cook the Masala Base
- b.Add the 2 chopped tomatoes and cook for 4-5 minutes, stirring occasionally, until they turn soft and mushy.
- c.Stir in 1/2 teaspoon turmeric powder, 1/2 teaspoon red chili powder, and the remaining 3/4 teaspoon of salt. Mix well and cook the spices for one minute.
- d.Add the 1/2 cup of freshly grated coconut and mix everything together. Cook for 1-2 minutes until the coconut is fragrant and well-integrated with the masala.

- a.Scramble the Eggs
- b.Reduce the heat to low and pour the whisked egg mixture into the pan over the masala.
- c.Allow the eggs to sit undisturbed for about 30 seconds to let the bottom layer set slightly.
- d.Using a spatula, gently scrape the bottom of the pan and fold the cooked portions over the uncooked liquid. Continue this process for 2-3 minutes until the eggs are cooked to your liking but still soft and moist.

- b.Turn off the heat. Sprinkle the 2 tablespoons of chopped coriander leaves over the bhurji and give it a final gentle mix.
