- e.The vegetables are ready when the tomatillos are tender and have changed from bright green to a dull, olive-green color. Do not overcook, as they can burst.

- c.Using a slotted spoon, carefully transfer the boiled vegetables to a blender or food processor.

- e.Blend on high until smooth. If the sauce is too thick, add the reserved cooking water, one tablespoon at a time, until you reach your desired consistency.
