Bihari Chicken Roast
A rustic and robust chicken dish from Bihar, slow-cooked with a generous amount of onions, whole spices, and pungent mustard oil. The chicken becomes incredibly tender, coated in a thick, flavorful masala.

Marinate the Chicken
- In a large mixing bowl, combine the chicken pieces, whisked curd, ginger-garlic paste, turmeric powder, red chili powder, coriander powder, cumin powder, and 1 tsp of salt.
- Mix thoroughly until every piece of chicken is evenly coated in the marinade.
- Cover the bowl and let it marinate for at least 30 minutes at room temperature, or for up to 4 hours in the refrigerator for deeper flavor.
Temper the Spices
- Place a heavy-bottomed pot (like a handi or Dutch oven) over high heat. Add the mustard oil and heat it until it just begins to smoke. This crucial step removes its raw pungency.
- Immediately reduce the heat to medium-low and let the oil cool for a minute.
- Add the bay leaves, cinnamon stick, green and black cardamoms, cloves, black peppercorns, and dried red chilies. Sauté for 30-45 seconds until they become fragrant.

- Add the thinly sliced onions to the pot. Sauté on medium heat for 8-10 minutes, stirring occasionally, until they become soft and translucent. Do not let them brown.
- Add the marinated chicken, the whole garlic bulb, and the remaining 0.5 tsp of salt to the pot.
- Increase the heat to medium-high and stir-fry (bhun) for 5-7 minutes, mixing the chicken with the onions until the chicken is sealed and the raw smell of the masala disappears.
Slow Cook to Perfection
- Reduce the heat to the absolute lowest setting. Cover the pot with a tight-fitting lid.
- Allow the chicken to slow cook for 40-45 minutes. The chicken and onions will release their own moisture, creating a thick gravy. No extra water is needed.
- Stir gently every 10-15 minutes to prevent the masala from sticking to the bottom of the pot.
Finish and Serve
- After 40-45 minutes, remove the lid. The chicken should be extremely tender, falling off the bone, and the oil should have separated from the masala.
- Sprinkle the garam masala over the chicken and gently mix it in. Cook for another minute.
- Garnish with freshly chopped coriander leaves. Serve hot with roti, paratha, or steamed rice.
